CÉPAGE gives Starstreet Precinct a taste of contemporary French cuisine paired with wine from one of the city’s best cellars, transforming each meal into a truly memorable event. It is Singapore’s Les Amis Group’s first overseas venture. The name is from the French wine term for variety or blend of different grapes. Likewise, CÉPAGE is a marriage of the different elements that make up a gourmet restaurant and the delicate balance that makes each experience special.
First is the food. Executive chef Thomas Mayr is an Austrian who hails from the north of Italy. After working on both sides of the Atlantic for establishments including two star Michelin restaurant Tantris, he joined Singapore’s Les Amis Group in 2007. His touch is light, with dishes that reflect local climates and palettes yet are infused with his signature artistry. For example, his Alaskan crab prepared two ways uses live crabs while his silky organic Japanese egg with oxtail consume jelly and strips of black truffle is a subtle contrast of textures and flavours.
Next is the wine. A floor to ceiling temperature-controlled wine cellar dominates the first floor. Boasting more than 2,100 labels, CÉPAGE’s wine programme is vibrant and interesting, emphasising pairing with different dishes for a truly customised meal. Director of group operations Randy See is a professional sommelier, and his love for exquisite wine ensures excellent quality at competitive prices.
With its three spacious levels and 56 seats, CÉPAGE is intimate and personal, favouring quality over quantity. Designed by Singapore’s Kay Ngee Tan Architects, the interiors sparkle with chandeliers, onyx marble and warm woods to blend old world charm with contemporary chic.
